Meet the Dietitian
Our Registered Dietitian, Eric Finley, MS, RD, brings years of experience in sports nutrition, performance coaching, and campus wellness to the SDSU dining program. A St. Louis native, Eric discovered his passion for nutrition through soccer, earning a degree in Sports Nutrition and Exercise Physiology from the University of Missouri, followed by a Master’s in Dietetics from the University of Utah. His career includes work with student-athletes at Utah, Olympic athletes in Park City, and providing one-on-one counseling and group education in campus dining. Eric is committed to helping students make informed decisions about their nutrition. Mindful Program
Mindful is Sodexo's health and wellness approach that helps make healthy choices second nature. We focus on providing nutritious foods and creating an environment that encourages balanced eating. Mindful offerings are designed with transparency in mind, featuring clear ingredient information, satisfying portions, and a straightforward message so that you can make informed choices.
Mindful meals meet nutritional criteria based on the Dietary Guidelines for Americans. Each item is limited in calories, with fewer than 30% of calories from fat, fewer than 10% of calories from saturated fat, and controlled amounts of sodium and cholesterol. Look for the Mindful icon to find healthy, flavorful selections at each meal.
Food Allergies
We take pride in serving wholesome ingredients, preparing recipes accurately, and providing detailed nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front-line servers, we work carefully to address food allergies, celiac diets, or other dietary needs. We encourage students with medical conditions affecting their ability to dine on campus to schedule a meeting with our Registered Dietitian, Executive Chef, and/or General Manager through our Meet the Team form. In many cases, our dining team can accommodate special dietary requirements.

In some instances, Dining Services may not be able to meet a student’s medical needs within regular service. Additional medical documentation may be required to create a specific meal plan accommodation.
Students who require additional support can contact the SDSU Housing and Residential Life Department. Our teams work together to assist students with medical dietary needs. Simple Servings
Simple Servings is a resident dining option offering safe and convenient food choices for customers with food allergies, gluten intolerance, or those who prefer plain and simple meals. The Simple Servings station does not serve foods containing the FDA’s most common allergens: peanuts, tree nuts, shellfish, wheat, soy, milk products, sesame, and eggs. All menu items are prepared without gluten-containing ingredients.
Simple Servings staff members are trained to minimize cross-contact by using separate equipment, storage areas, utensils, and preparation spaces. While these efforts greatly reduce the risk, we cannot completely eliminate the possibility of gluten or allergens being present.
