Meet the Dietitian
Our Registered Dietitian, Myranda Erdmann, MS, RD, LDN, CPhT, adds another dimension to our dining program by working with our campus community to encourage healthy lifestyles and to help individuals become more comfortable in their dining environment at South Dakota State University. She has a passion for leading a healthy lifestyle and empowering people of all ages to reach their healthiest potential through food and nutrition. Myranda works closely with our Housing and Residential Department to ensure the health and safety of our students with medical needs. She provides ongoing food allergy education to our dining team to help ensure safe and delicious foods for our customers with food allergies and Celiac disease.

Mindful offerings meet stringent nutritional criteria based on the Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10% of calories as saturated fat, and is restricted in sodium, and cholesterol. Look for the Mindful icon to indulge in the healthy and delicious items offered at each meal.
We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements through our online menus and nutrition calculator. From our general manager to our front-line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs. We want to meet one-on-one with anyone who has individual dining needs to ensure that your dining experience is safe, delicious, and social. For students with medical conditions that impact their ability to dine well on campus, we strongly encourage a conversation with our Registered Dietitian, Executive Chef, and/or General ManagerMeet the Team. In many instances, our dining team can easily assist with special needs. Occasionally, Dining Services cannot meet a student’s medical needs within normal service. We may require additional medical documentation to enable us to develop a more specific meal plan accommodation.
In this situation, we ask that the student contact the SDSU Housing and Residential Life Department. Together, our departments work to serve our students with medical needs related to dining on campus. Simple Servings is our resident dining option, providing safe and appetizing food choices “ready to go” for our customers with food allergies, gluten intolerance, or those who prefer plain and simple foods. The Simple Servings station does not offer foods made with the FDA most-common allergens of peanuts, tree nuts, shellfish, wheat, soy, milk products, sesame and eggs. All foods offered will be made without gluten-containing ingredients. Simple Servings staff members are carefully trained to avoid cross-contamination of their menu items. Separate equipment, storage areas, utensils and preparation areas minimize, but do not totally eliminate, the chances of gluten and allergens in our Simple Servings foods.
